2 cups fresh baby arugula
1 small Belgium endive
1 one half cup sliced strawberries
1 tbsp raspberry vinegar
1tbsp extra virgin olive oil
salt
pepper
1. Mix arugula, endive, strawberries, vinegar, olive oil, salt and pepper into a mixing bowl.
2. Plate salad as desired

It was my daughter who love to eat watermelon soup. I grab her recipe and post here today. We called this watermelon soup. The ingredients are the following: 1 forth fresh seedless watermelon, 1 tsp tobasco, 1 tbsp Italian herbal liqueur, 1 tbsp dry apple brandy liqueur, one half oz vodka, salt and pepper to taste. In a blender, puree watermelon. Pour watermelon puree into a mixing bowl. Mix the watermelon puree with tobasco, herbal liqueur, vodka and desired the amount of salt and pepper. Garnish with sour cream and apple brandy liqueur. Serve.
